Peanut Butter Easter Eggs
Do I have any peanut butter and chocolate lovers out there?! I am definitely one of them. One of my favorite and most memorable Easters was when the Easter Bunny filled my basket with everything Reese’s- Reese’s Eggs, Reese’s Bunnies, Reese’s Pieces… it was overflowing with Reese’s candy of every kind! It was the best Easter!
Since we have so much more time at home because of social distancing, we have been able to create more in the kitchen! From baking cookies to making slime… we have been pretty busy. Easter is only a few days away so we decided to make Peanut Butter Eggs. My favorite! And I think they taste even better than the Reese’s eggs!
This recipe only calls for a few ingredients, is super easy to follow, and the kids loved making them! We gathered the ingredients and they took turns adding and mixing the peanut butter, butter, sugar, and milk. I put a handful of the peanut butter mixture in front of each of them and they rolled lots of egg shapes! Some big and some super tiny. Apparently Johanna even rolled an itty bitty egg for her baby cousin (who is just 1 month old). Haha! Then we chilled them in the fridge.
After about an hour in the refrigerator, we melted the semi-sweet chocolate chips (with a tiny bit of shortening to thin it out just a tad) in the microwave and mixed every 30 seconds until it was completely melted. Then, the kids dipped their eggs in the chocolate and placed them on a cookie sheet lined with wax paper. We tried to refrain from taste testing until the way end, but the melted chocolate was too irresistible.
Once the peanut butter eggs were covered in chocolate, we chilled them a little bit longer. After dinner, we enjoyed these eggs for dessert. SO DELICIOUS!
I hope that you and your family have a wonderful Easter holiday given the circumstances that we are all facing right now. Enjoy the extra snuggles and stay safe.
